I seem to be doing something wrong – or CandyBar is…
I tried to use it change the stock finder icons by dragging and dropping the icons and applying – but now the toolbar only has generic “preview” icons for the delete and get info items.
I have rebooted and restarted the finder – any ideas?
I am checking with Panic too.

Ignore the last – CandyBar let me be an idiot.
It let me drag the icons directly into the app without adding them to the app.
Further playing by creating a new collection let it work.

You can replace them in
/System/Library/CoreServices/CoreTypes.bundle/Contents/Resources/
And possibly
/System/Library/CoreServices/Finder.app/Contents/Resources/
